How much maple syrup does Canada make?

18.88 million imperial gallons in 2025: that’s 85.8 million litres, or 22.7 million US gallons, just shy of 2024’s record of 19.90 million. Québec made 90.0% of it. Here’s a century of the numbers, straight from Statistics Canada.

A hundred years of Canadian maple syrup

For most of the 20th century Canada’s crop bounced between about 1.4 million and 3.9 million imperial gallons a year. The 1947 record (3.923 million) stood until 1992; since 2000 the record has been broken 9 times (2000, 2009, 2013, 2016, 2017, 2019, 2020, 2022, 2024).

Statistics Canada publishes thousands of imperial gallons of "maple products expressed as syrup" (syrup, plus sugar, taffy and butter converted to syrup; one gallon of syrup = 13.2476 lb, table note 1). Litres and US gallons are exact conversions in our research pack (1 imperial gallon = 4.54609 L). The separate product series end in 2000.

By province, 2025

Four provinces, one giant

Statistics Canada tracks four maple provinces. Québec made 16,984,000 of Canada’s 18,876,000 imperial gallons in 2025; New Brunswick, Ontario and Nova Scotia shared the rest.

Nova Scotia’s 2022 and 2023 figures are rated “F” (too unreliable to publish), so Canada’s gross value is missing for those years. Since 1986, New Brunswick and Ontario are weighted to the last Census tap count, and Québec’s figures come from ISQ, AGÉCO and PPAQ, which is why they differ slightly from PPAQ’s own numbers.

FAQ

Canadian maple questions

How much maple syrup does Canada produce?
18.88 million imperial gallons in 2025 by Statistics Canada's count, or 85.8 million litres (22.7 million US gallons) of maple products expressed as syrup. The record is 19.90 million imperial gallons, set in 2024.
What percent of the world's maple syrup comes from Canada?
About four of every five gallons. By volume, Canada made 79.9% of combined Canadian and US maple syrup in 2025. Agriculture and Agri-Food Canada puts it at "more than 75%" for 2025. Only Canada and the US make maple syrup at commercial scale, so that is effectively the world.
What percent of maple syrup comes from Québec?
90.0% of Canada's 2025 production by Statistics Canada's figures. PPAQ, Québec's producer federation, puts Québec at 89.97% of Canada and 71.7% of the world for 2025.
How much maple syrup does Québec produce?
16,984,000 imperial gallons in 2025 (Statistics Canada). PPAQ, which counts in pounds, reports 224.9 million pounds for 2025 from 55.6 million taps.
What was Canada's biggest maple syrup year?
2024: 19.90 million imperial gallons (90.5 million litres). The low point of the century was 1971, at 1.394 million imperial gallons.

AAFC states that Canada and the United States are the only countries producing maple syrup at commercial scale; no FAO/UN series exists for maple syrup, so “world” in every source below means Canada + United States.
