Does maple syrup go bad?

Real maple syrup is mostly sugar, so it keeps far longer than most of what's in your fridge. It isn't immortal, though. Here's what the manuals say about the shelf, the fridge, the freezer, and the jar that went wrong.

The short answer

Sealed maple syrup that was packed hot keeps for years, and the sources treat it as safe on the shelf. What fades is quality: the color darkens and the flavor flattens, slowly in glass and faster in plastic or metal. Once you open it, keep it in the fridge or the freezer.

Four rules that cover almost every jar

Unopened and hot-packed: a cool, dark cupboard is fine. Opened: refrigerate or freeze. Mold on top: throw it out. Crystals or a darker color: still good syrup.

Unopened: on the shelf

Two different clocks run on a sealed bottle. The safety clock barely moves: Cornell's beginner notebook says a properly hot-packed, sealed container is stable at room temperature for an unlimited length of time, and that refrigeration isn't needed until it's opened. The Massachusetts producers' association tells customers the same thing, that unopened syrup keeps indefinitely.

The quality clock is the one that runs out. Sources give different spans, and they're both shown here because a dated consumer sheet still turns up in search:

How long unopened maple syrup keeps its quality, by container
ContainerProducers Manual (2022)Ohio State (2010)
Metal canAbout 6 to 12 months (longer if lacquer-lined)11 to 12 months
Plastic jugUp to 2 years3 to 6 months
GlassUp to about 4 yearsIndefinitely (may darken slightly)

Why plastic loses first: oxygen gets through the container wall. In UVM's trials, syrup in ordinary uncoated jugs lost 2.6 points of light transmittance a month, against 0.8 in jugs with an oxygen barrier. (The jug maker funded that study.) Heat speeds darkening too, so the best shelf is cool, dark and steady.

Opened: into the fridge

Every source we read agrees: once a container is open, syrup belongs in the refrigerator or the freezer. The 2022 Producers Manual says so plainly; Cornell's notebook puts the line at the same place, saying refrigeration isn't needed until the container is opened.

How long it lasts in the fridge is where the sources part ways:

  • Producers Manual, 2006: keep in the fridge what you'll use in two weeks, and freeze the rest.
  • Ohio State, 2010: stricter than everyone else. It says to refrigerate syrup right after you buy it, even unopened, and use it within a year.

If you go through a jar slowly, the 2006 rule is the practical one: a small bottle in the fridge, the rest in the freezer.

The freezer: the long game

Freezing is the best long-term storage. The 2022 Producers Manual says syrup never freezes solid, and its quality holds indefinitely there.

Ohio State suggests moving syrup into glass freezer jars, filled to about an inch from the top, instead of heating and re-canning it: every reheat darkens syrup a little.

Homemade syrup: it depends how you packed it

The shelf-life numbers above assume the syrup was hot-packed: at least 180°F in all of the syrup when the cap goes on, the minimum in the 2022 Producers Manual. Syrup bottled cooler than that (“cold packed”) has to live in the refrigerator or freezer, the manual and UNH Extension both say, and it should be labeled that way.

Density matters as much as heat. The 2022 manual ties fermentation to low-density syrup, and Ontario's ministry notes many producers aim for 66.5 °Brix or slightly higher to keep mold away. Even that isn't a guarantee: most of the moldy samples UMaine tested were above 66 °Brix, because some fungi tolerate very high sugar.

Packing your own? How to bottle maple syrup covers temperatures, containers and inverting, and finishing without a hydrometer gets the density right first.

How to tell a jar has gone bad

Signs a jar of maple syrup has gone bad, and what to do
What you seeWhat it isWhat to do
Fuzzy or filmy growth on topMoldDiscard it (current guidance)
Foam, a bulging lid, a fruity or alcoholic smellFermentationNo salvage method in the sources; it can't be Grade A
Hard, clear crystals on the bottomSucrose crystalsStill safe: a quality defect
Darker than when it was newOxidationStill good: it has moved down a color grade

On mold, the advice has changed. Older texts said to skim it off and reboil; the 2022 Producers Manual says not to, because the fungus is more than the visible mat and mycotoxins can't be filtered out or destroyed by heating. UMaine Extension and Ohio State also say to discard it. The full story, source by source, is in mold, crystals and fizzy syrup.

FAQ

Common questions

Does maple syrup go bad?
Sealed, properly hot-packed syrup doesn't spoil on the shelf: Cornell calls it stable at room temperature for an unlimited length of time. Its quality slowly slips instead, darkening and losing flavor, faster in plastic or metal than in glass. Once a container is open, syrup can grow mold, so every source says to refrigerate or freeze it.
Does maple syrup need to be refrigerated?
Not until it's opened. Cornell says refrigeration isn't necessary until the container is opened, and the 2022 Producers Manual says to keep syrup refrigerated or frozen once it is. One stricter voice: Ohio State's 2010 consumer sheet says to refrigerate even unopened syrup and use it within a year.
How long does maple syrup last after opening?
The sources don't agree on one number. The 2006 Producers Manual told customers to refrigerate what they'll use in two weeks and freeze the rest. Ohio State's 2010 sheet says refrigerate and use within a year. What they all agree on: opened syrup goes in the fridge or the freezer, and moldy syrup gets thrown out.
Can you freeze maple syrup?
Yes, and it's the best long-term storage. The 2022 Producers Manual says syrup never freezes solid and its quality holds indefinitely. Ohio State suggests glass freezer jars filled to about an inch from the top, rather than reheating and re-canning, since reheating darkens syrup.
Is maple syrup with crystals in it still good?
Yes. Hard, clear crystals on the bottom are sucrose that came out of syrup finished too dense. The 2022 Producers Manual treats them as a quality defect, not spoilage. Mold is different: current guidance is to discard the syrup.
